Banana Walnut Biscuits

About the Recipe

Move over banana bread! Sweetened with the natural sugars from bananas and golden berries and a touch of maple syrup, these biscuits are mildly sweet and nutty with a fluffy and delicate crumb. Supercharged with plant based protein and fiber, these biscuits will keep you going all morning long.

Ingredients

  • 2 cups Compassionate Kitchen Biscuit Mix

  • 2 bananas

  • 2 tbsp ground flaxseed

  • 2 tbsp chia seeds

  • 6 tbsp water

  • 1/3 cup extra virgin coconut oil (melted)

  • 1/3 cup maple syrup

  • 1/3 cup hemp seeds

  • 1 cup chopped walnuts

  • 2/3 C golden berries (or other dried furit)

Preparation

Step 1

Pre-heat oven to 450. In a medium bowl, mash together bananas, ground flaxseed, chia seeds, oil, water, and maple syrup.


Step 2

Add in Biscuit Mix and mix until a loose dough is formed.


Step 3

Fold in chopped walnuts, golden berries, and hemp seeds.


Step 4

Transfer dough to floured surface and fold it over itself a couple times.


Step 5

Roll out dough or flatten with your hands until it is about 1/2" thick.


Step 6

Cut out biscuit shapes with biscuit cutter or the rim of a glass and place on parchment lined baking sheet. Make sure the biscuits just touch eachother as this will help them rise better.


Step 7

Bake at 450 for 12 - 15 minutes until golden brown.


*Makes approximately 12 - 15 biscuits.
