Ingredients
1 1/3 cups of Instant Baking Mix
1/3 cup of sugar (for a sweeter bread you can make this 2/3)
1 teaspoon vanilla extract
4 small overripe bananas or 3 large ones
1/4 cup plant-based milk
Optional add ins:
1/2 cup chopped walnuts (pictured)
1/2 cup of chocolate chips
1 teaspoon cinnamon
Preparation
Step 1
Preheat oven to 350°F and lightly oil a loaf pan.
Step 2
In a medium bowl, add the Instant Mix and sugar, ensuring no clumps.
Step 3
Add in the vanilla, bananas, and plant-based milk. Mash the bananas in using either the back of a fork or hand mixer on low speed until all is well combined and just easy enough to pour.
Step 4
Pour batter into the prepared loaf pan and bake for 50 minutes to 1 hour. Let rest for 10 minutes before serving.
